Last year my neighbor's son was diagnosed with the Celiac Disease. Neither of the parents had it, but they made sacrifices for their son and changed to a Gluten Free diet so he wouldn't feel left out. They knew all the foods they were unable to eat and accepted it quietly with composure.
Well i felt strongly for this family that had always been so good to me, so i began scouring the Internet and reading books to find tasty substitutes for all the foods they were unable to eat. Things like cinnamon rolls, different types of cakes, even pizza. It took me a while, but i found a quick lasagna recipe as well. It freezes well and takes a short time to throw together.
This recipe is one of my favorites because it tastes like any other regular lasagna, and it takes such a short time to put together!
Quick Lasagna Recipe:
1 box (12 pieces) Gluten Free lasagna noodles
1 glove garlic minced
1 egg
2, 16-oz. container low fat ricotta
1/2 cup Parmesan cheese
8 oz. mozzarella cheese
1 1/2 large jars marinara sauce
All you have to do for this Gluten Free recipe is cook the noodles in a pot until their ready.
Mix together the Ricotta with the minced garlic and your single egg.
Try and get a 9 x 13 Inch Pyrex casserole dish to throw your ingredients in. You can use other containers but this is the easiest to work with. Spread your noodles over the container so that they line the bottom, and add the ricotta, Mozzarella, Parmesan, and Marinara.
Then add more noodles, and the ingredients again making 3 layers of tasty lasagna.
It's a good idea to spray an aluminum foil sheet with some vegetable oil spray and cover your casserole. Then throw it in the oven to bake at 350 Degrees for around 45-60 minutes.
